Strawberries and Cream Chantilly Log Recipe 🍓✨

Ingredients

For the Rolled Biscuit:

  • 4 eggs 🥚
  • 100 g granulated sugar 🍬
  • 100 g all-purpose flour 🌾
  • 1 pinch of salt 🧂

For the Chantilly Cream:

  • 300 ml cold heavy cream ❄️
  • 50 g icing sugar 🍩
  • 1 tsp vanilla extract 🌼
  • 500 g fresh strawberries 🍓

For Decoration:

  • Whole fresh strawberries (for garnish) 🍓
  • Chantilly cream (for detailing) ❄️
  • Sugar decorations (flakes, pearls, etc.) ✨

Instructions

1. Prepare the Rolled Biscuit:

  1. Preheat your oven to 180°C (350°F).
  2. Separate egg whites and yolks into two bowls.
  3. In the bowl with yolks, whisk them with sugar until the mixture becomes pale and frothy.
  4. Sift the flour and gently fold it into the yolk mixture.
  5. In the separate bowl, beat egg whites with a pinch of salt until stiff peaks form.
  6. Carefully fold the beaten egg whites into the batter.
  7. Spread the mixture evenly onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes, or until the surface is lightly golden and springy to the touch.
  9. Remove from the oven and immediately roll the biscuit in a damp kitchen towel. Allow it to cool completely.

2. Prepare the Chantilly Cream:

  1. In a chilled mixing bowl, whisk cold heavy cream, icing sugar, and vanilla extract until stiff peaks form. Be careful not to overwhip.

3. Assemble the Log:

  1. Unroll the cooled biscuit carefully.
  2. Spread a generous layer of Chantilly cream over the biscuit, leaving a slight border.
  3. Evenly distribute diced strawberries over the cream.
  4. Roll the biscuit tightly to form a log. Place it seam-side down.
  5. Spread Chantilly cream over the entire log to cover it completely.

4. Decorate the Log:

  1. Use whole strawberries to create festive designs, such as Santa hats, and add Chantilly cream accents for details.
  2. Sprinkle sugar decorations, flakes, or edible pearls for a wintery effect.

5. Presentation:

  • Place the log on a serving platter and add additional decorations as desired.
  • Refrigerate for at least 1 hour before serving to allow the flavors to meld.
