Ingredients:

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 1/2 cup mini chocolate chips
  • 1 cup peanut butter chips
  • 2 teaspoons coconut oil

Instructions:

  1. Combine Ingredients: In a large bowl, combine peanut butter, softened butter, powdered sugar, and graham cracker crumbs. Mix until well combined.
  2. Mix in Chocolate Chips: Fold in the mini chocolate chips until evenly distributed.
  3. Shape Truffles: Using a small cookie scoop or your hands, scoop out small portions of dough and roll into balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
  4. Melt the Coating: Melt peanut butter chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  5. Coat the Truffles: Dip each chilled truffle into the melted peanut butter coating, ensuring it’s fully covered. Place back on the parchment-lined baking sheet.
  6. Add Topping: Sprinkle mini chocolate chips on top of each truffle.
  7. Chill and Serve: Refrigerate for 15-20 minutes, or until the coating has set.
