This Lime Mousse Cheesecake is a citrusy masterpiece, perfect for any dessert lover. Ingredients

  • Crust:
    1 ½ cups graham cracker crumbs, ¼ cup granulated sugar, ½ cup melted butter.
  • Cheesecake Layer:
    3 packs (8 oz each) softened cream cheese, 1 cup granulated sugar, 1 cup sour cream, ¼ cup fresh lime juice, 1 tbsp lime zest, 3 large eggs.
  • Mousse Layer:
    ½ cup heavy cream, ½ cup sweetened condensed milk, 2 tbsp gelatin, ¼ cup cold water, ¼ cup fresh lime juice.
  • Lime Glaze:
    ¼ cup lime juice, ¼ cup sugar.
  • Garnish: Fresh blackberries, mint leaves.

Directions

  1. Prepare the Crust:
    Mix graham cracker crumbs, sugar, and melted butter. Press into a greased 9-inch springform pan.
  2. Cheesecake Layer:
    Beat cream cheese and sugar until smooth. Add sour cream, lime juice, and zest. Mix in eggs, one at a time. Pour over crust and bake at 325°F (160°C) for 60-70 minutes. Cool completely.
  3. Mousse Layer:
    Dissolve gelatin in cold water, then heat gently until dissolved. Combine heavy cream, condensed milk, and lime juice. Mix in the gelatin. Pour over the cooled cheesecake and refrigerate for at least 4 hours or overnight.
  4. Lime Glaze:
    Heat lime juice and sugar in a saucepan until thickened. Pour over the chilled mousse layer.
  5. Garnish and Serve:
    Add blackberries and mint leaves for a refreshing touch.
