Caramel Chocolate Coffee Cheesecake Recipe

Ingredients

For the Crust:

  • 2 cups chocolate cookies, crushed
  • 1/2 cup melted butter

For the Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup caramel sauce
  • 1/4 cup chocolate (dark or milk)
  • 1/4 cup strong brewed coffee, cooled (optional)

For Garnish:

  • Whipped cream
  • Caramel pieces and crumbs
  • Additional caramel sauce

Method

Prepare the Crust:

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of the prepared pan.

Make the Cheesecake Filling:

  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the granulated sugar and vanilla extract, and beat until well combined.
  3. Add the eggs one at a time, beating on low speed after each addition just until blended.
  4. Stir in the sour cream and heavy cream until smooth.
  5. Add the brewed coffee (optional) and mix well.
  6. Divide the batter into two equal parts. Add caramel sauce to one part and mix well. Add melted chocolate to the second part and mix well.

Assemble and Bake:

  1. Pour the caramel cheesecake batter over the crust.
  2. Add the chocolate cheesecake batter over the caramel layer. Use a knife to swirl the batters together to create a marbled effect.
  3. Bake for 55-60 minutes or until the center is almost set.
  4. Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
  5. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.

Serve:

  1. Before serving, top with whipped cream, caramel sauce, and cookie crumbs. Drizzle with additional caramel sauce if desired.
