Banana Cake with Cream Cheese Frosting Recipe

Ingredients:

For the Cake:

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

For the Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour three 7-inch (18 cm) cake pans.
    • In a bowl, whisk together flour, baking powder, baking soda, and salt.
    • In another large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
    • Alternately add the dry ingredients and buttermilk to the creamed mixture, beginning and ending with the flour mixture. Fold in the mashed bananas.
    • Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Make the Frosting:
    • Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, and beat until creamy.
  3. Assemble the Cake:
    • Once the cake has completely cooled, spread a generous layer of frosting between each cake layer and over the top
