A Decadent Chocolate Cake: Straight from the Page of Matilda

This rich, moist chocolate cake is inspired by the beloved character Matilda. It’s a simple recipe that yields a delicious, decadent treat.

Ingredients:

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1/3 cup heavy cream
  • 2 teaspoons vanilla extract

Instructions:

  1. Prep the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In a separate bowl, whisk together eggs, milk, oil, and vanilla extract.
  4. Combine Wet and Dry: Gradually add wet ingredients to dry ingredients, mixing until just combined. Slowly stir in boiling water.
  5. Bake the Cake: Divide batter between prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in pans before transferring to wire racks.
  6. Make the Frosting: Beat butter until creamy. Gradually add powdered sugar, cocoa powder, heavy cream, and vanilla, beating until smooth and fluffy.
  7. Assemble the Cake: Place one cooled cake layer on a serving plate. Frost with buttercream. Top with the second layer and frost the top and sides of the cake.
