Indulge in a slice of pure chocolatey goodness!
This rich, moist chocolate cake is inspired by the beloved character Matilda. It’s a simple recipe that yields a delicious, decadent treat.
Ingredients:
For the Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- 1/3 cup heavy cream
- 2 teaspoons vanilla extract
Instructions:
- Prep the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In a separate bowl, whisk together eggs, milk, oil, and vanilla extract.
- Combine Wet and Dry: Gradually add wet ingredients to dry ingredients, mixing until just combined. Slowly stir in boiling water.
- Bake the Cake: Divide batter between prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in pans before transferring to wire racks.
- Make the Frosting: Beat butter until creamy. Gradually add powdered sugar, cocoa powder, heavy cream, and vanilla, beating until smooth and fluffy.
- Assemble the Cake: Place one cooled cake layer on a serving plate. Frost with buttercream. Top with the second layer and frost the top and sides of the cake.
Tips:
- For a richer flavor, use high-quality cocoa powder.
- To prevent the cake from drying out, don’t overbake.
- For a more intense chocolate flavor, add a teaspoon of instant coffee powder to the batter.
- To make the frosting smoother, beat it for a longer period.
- For a fun twist, add chocolate chips or chopped nuts to the batter or frosting.
Enjoy this delightful chocolate cake!
