  • 50 g of Mimolette Extra-vieille Isigny Sainte-Mère
  • 1 sachet of baking powder

  • 175 ml of milk
  • 1 jar of apple jelly
  • 350 g flour
  • 2 tablespoons of sugar
  • 1 pinch of salt

The steps of the recipe:

  1. Preheat your oven to 220 C. In a bowl, mix the flour, salt, sugar and yeast then add the butter in small cubes and mix until you get a sandy texture. Then add the grated Mimolette into chips using a thrift then pour the milk and mix again.
  2. Spread the dough on a baking sheet previously covered with parchment paper, the dough should be about 2 cm thick.

  • 200 g shelled peas
  • 4 eggs
  • the juice of half a lemon
  • 50 ml of white vinegar for cooking
  • 1 drizzle of olive oil

  • 2 branches of mint
  • 1 clove of crushed garlic
  • salt / pepper

The steps of the recipe:

  1. Mix the fresh cheese with the crushed garlic clove and the juice of half a lemon and set aside.
  2. Melt the butter gently in a small saucepan until it begins to lightly colour hazel brown. Then turn off the heat and then stir in the oil and espelette pepper and set aside.
  3. Cook the peas for 10 minutes in a pot of boiling water and then heat another pot of boiling water with the white vinegar. Break the eggs in small separate ramekins.
  4. Create a whirlwind in the water and then gently slide the egg into the pan (two eggs at a time) and lower the heat so that there is no more boiling. Cook for 4 minutes then place the eggs on a plate using a skimmer and repeat the operation with the other two eggs.

  • 80 g spinach shoots

The steps of the recipe:

  1. Peel and slice the onion and then sauté it in a pan with a drizzle of olive oil. Let it cook for about 5 minutes then add the blueberries to the pan and cook again for 5 minutes.
  2. Then toast the slices of bread. On four slices of bread, place the caramelized onions with the blueberries, add three pieces of Camembert and finish with the spinach shoots. Close the sandwich and enjoy!

  • 1 organic cucumber
  • 2 green apples (Granny Smith type)
  • 1 cm ginger

  • 8 cl orange juice

The steps of the recipe:

  1. For cucumber juice, rinse the cucumber under cool water and cut it into sections (without peeling it). Then wash the apples, cut them into 2, remove the heart and seeds and then detail them into quarters. Peel the ginger and cut it into pieces.
  2. Pass everything to the centrifuge (or extractor) and add the lemon juice. Divide into glasses and serve.
