Peanut Butter Roll Cake

Instructions:

Step 1: Prepare the Cake

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and grease lightly.
  2. Prepare the chocolate cake mix according to package instructions. Spread the batter evenly in the pan.
  3. Bake for 15–18 minutes until a toothpick inserted in the center comes out clean.

Step 2: Roll the Cake

  1. While still warm, gently roll the cake (with parchment paper) from one short end. Let it cool completely in this rolled form to hold its shape.

Step 3: Make the Peanut Butter Filling

  1. Beat the peanut butter, softened butter, powdered sugar, and vanilla extract until fluffy.

Step 4: Whip the Cream

  1. Beat heavy cream and powdered sugar until stiff peaks form.

Step 5: Assemble the Roll Cake

  1. Carefully unroll the cooled cake and spread the peanut butter filling evenly.
  2. Sprinkle chopped Reese’s Peanut Butter Cups over the filling and re-roll the cake without parchment paper.

Step 6: Add Ganache (Optional)

  1. Melt chocolate chips and vegetable oil together in the microwave, stirring until smooth. Drizzle over the rolled cake for an elegant finish.

Step 7: Chill and Serve

  1. Refrigerate for at least 1 hour to set the filling and ganache. Slice and serve chilled or at room temperature.

Pro Tips:

  • Use Room Temperature Ingredients: This ensures a smooth and fluffy peanut butter filling.
  • Refrigerate Before Slicing: This step makes clean, beautiful slices easier.
  • Extra Decoration: Add whole Reese’s Cups on top for a festive look!
