Lemon Strawberry Swirl Cheesecake

This layered cheesecake combines the tangy flavor of lemon with the sweetness of strawberries. It’s the perfect summer dessert.
Ingredients:
For the Crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- 2 tablespoons sugar
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 tablespoons all-purpose flour
- Zest and juice of 1 lemon
- 1 teaspoon vanilla extract
For the Strawberry Swirl:
- 1 cup fresh strawberries, hulled and chopped
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions:

Prepare the Crust:
- Preheat oven to 325°F (160°C).
- Combine graham cracker crumbs, melted butter, and sugar.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes. Let cool.

Make the Strawberry Swirl:
- Combine strawberries, sugar, and lemon juice in a small saucepan.
- Cook over medium heat until the strawberries break down.
- Blend until smooth.

Prepare the Cheesecake Filling:
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in flour, lemon zest, lemon juice, and vanilla extract.

Assemble the Cheesecake:
- Pour half of the cheesecake batter into the prepared crust.
- Top with spoonfuls of strawberry sauce, swirling it into the batter with a knife.
- Pour the remaining cheesecake batter on top.

Bake and Chill:
- Bake for 55-60 minutes, or until the center is almost set.
- Let cool in the oven for 1 hour with the door slightly open.
- Refrigerate for at least 4 hours or overnight.
