Ingredients:

  • 1 ½ cups all-purpose flour

  • ½ cup sour cream
  • 1 cup crushed pineapple, drained
  • ½ cup powdered sugar (optional, adjust to taste)
  • 2 tablespoons pineapple juice

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar: In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla: Add eggs one at a time, beating well after each. Stir in the vanilla extract.
  5. Incorporate flour and sour cream: Gradually add the flour mixture to the butter mixture in three parts, alternating with the sour cream. Start and end with the flour mixture. Mix until just combined.
  6. Add pineapple: Gently fold in the crushed pineapple until evenly distributed.
  7. Bake: Pour the batter into the prepared loaf pan. Smooth the top and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake: Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Make the glaze: In a small bowl, whisk together powdered sugar and pineapple juice. Drizzle the glaze over the cooled cake and add extra pineapple if desired.
