Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup whole milk
  • 4 large eggs
  • 2 tsp vanilla extract

For the Caramel Sauce:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp salt

For the Crunch Topping:

  • 1 cup crushed toffee bits (e.g., Heath bars)
  • 1/2 cup chopped pecans or walnuts (optional)

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup caramel sauce
  • 2–4 tbsp heavy cream
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

Step 1: Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans.
  2. Combine dry ingredients in a bowl. Add butter, milk, eggs, and vanilla; mix until smooth.
  3. Divide batter evenly between pans and bake for 25–30 minutes. Cool completely.

Step 2: Prepare the Caramel Sauce

  1. Heat sugar in a saucepan until it melts and turns amber.
  2. Stir in butter until combined, then slowly add cream while stirring.
  3. Remove from heat and mix in vanilla and salt. Cool before using.

Step 3: Create the Crunch Topping

Mix crushed toffee bits with nuts (if using).

Step 4: Make the Frosting

Beat butter until creamy. Add powdered sugar gradually, followed by caramel sauce, cream, vanilla, and salt. Whip until fluffy.

Step 5: Assemble

  1. Place one cake layer on a plate. Spread caramel sauce, sprinkle crunch topping, and add frosting.
  2. Top with the second layer and repeat. Frost the sides and decorate with caramel and crunch topping.

Pro Tips

  1. Avoid Overmixing: Overmixing the batter can make the cake dense. Mix just until combined.
  2. Cool Completely: Ensure the caramel sauce is cool before adding to frosting to avoid melting.
  3. Store Smart: Refrigerate the cake for 20 minutes before slicing to keep layers neat.
