Delicious Butterscotch Pecan Cake Recipe

Ingredients:

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups brown sugar, packed
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1 cup chopped pecans

For the Butterscotch Sauce:

  • 1 cup brown sugar, packed
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1 tsp vanilla extract

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup butterscotch sauce (from above)
  • 2-3 tbsp heavy cream

Instructions:

Make the Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Gradually add the dry ingredients alternately with the buttermilk and sour cream, beginning and ending with the dry ingredients.
  6. Fold in the chopped pecans.
  7. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before frosting.

Prepare the Butterscotch Sauce:

  1. In a saucepan over medium heat, combine brown sugar, heavy cream, and butter. Stir until the mixture comes to a boil.
  2. Simmer for 3-4 minutes, stirring occasionally.
  3. Remove from heat and stir in vanilla extract. Let cool to room temperature.

Make the Frosting:

  1. In a bowl, beat the butter until creamy. Gradually add powdered sugar, alternating with butterscotch sauce and heavy cream, until the desired consistency is reached.

Assemble the Cake:

  1. Place one cake layer on a serving plate. Spread a layer of frosting over the top.
  2. Place the second cake layer on top and frost the entire cake.
