Erica Stoll was born and raised in a middle-class family in Rochester, New York, United States. While her date of birth is unknown, she is reportedly two years older than her golfer husband. She has a sister named Natalie Stoll. As a child, she learnt sailing from her father and grandfather, and has been an avid sailor since then. She moved to Palm Beach Gardens, Florida with her family when she was a teenager, and loves the relaxing lifestyle there. She loves to bake, and to show her attachment with PGA, she bakes cookies in the colors of the PGA every year and shares pictures of those on her private social media accounts. Erica Stoll was described as a "very low key person, not the kind to broadcast stuff" by her then-boyfriend, Rory McIlroy, in an interview with 'The Independent' before the two got married. She had a quiet life as a professional working for the PGA America prior to meeting Rory, and she continued to live that way for years after their first encounter. However, there has been immense speculation about the love life of the pro golfer following his public break up with his fiancée, Danish professional tennis player Caroline Wozniacki, in May 2014. As a result, as soon as the news of their involvement became public in 2015, tabloids jumped at the chance to unearth every detail they possible could about Erica and Rory's budding romance.

Erica Stoll first met her future husband, Rory McIlroy, in September 2012 when she was working as an employee for PGA America. Rory, who had come to participate in the Ryder Cup at Medinah, Illinois, had almost missed his match as he had overslept due to a mix up with his tee time. Thankfully, it was Erica who had noticed that he had not left the hotel and came to his rescue at the right moment. She was all set to drive him to the golf course, but later arranged for a policeman to escort him with the flash light on for faster travel. Nevertheless, he had only managed to reach the venue 12 minutes before tee off. He went on to defeat his opponent, Keegan Bradley, to help his team to victory. The two immediately became friends following that incident.

While Rory subsequently purchased a $10 million property in Palm Beach Gardens in Florida in December, he was at the time dating tennis player Caroline Wozniacki.

Despite getting engaged to her on New Year's Eve the following year, he publicly broke off the engagement in May 2014, after the wedding invitations were already sent out, stating that he had suddenly realized that he was not ready for marriage yet. He reportedly began dating Erica sometime in 2015, but that didn't stop some tabloids from speculating whether she had any role to play in the separation.

In December 2015, it was reported that the two had become engaged after he proposed to her with a ring during a romantic holiday in Paris. On April 22, 2017, the couple got married at Ashford Castle in Cong, County Mayo, one of the top hotels in Ireland, in front of renowned guests from the fields of sports and entertainment. Among the guests in attendance were musicians like Coldplay's lead vocalist Chris Martin and One Direction’s singer-songwriter Niall Horan, as well as golfers Padraig Harrington and Paul McGinley. Legendary soul singer Stevie Wonder was flown in to perform at the star-studded event, which is said to have cost Rory about £920,000. The couple subsequently went on honeymoon to Canouan Island in St. Vincent and The Grenadines.
