Ingredients

  • 2 (3.5 oz) packages of instant vanilla pudding mix
  • 1 (8 oz) container of whipped topping (Cool Whip), thawed
  • 3 cups milk
  • 2 sleeves graham cracker squares
  • 1 (16 oz) tub chocolate frosting

Éclair Cake

Directions

Step 1: Prepare Pudding Mixture
In a medium bowl, whisk together the pudding mix, milk, and Cool Whip until smooth.

Step 2: Layer the Graham Crackers
In a 9×13-inch baking dish, arrange a single layer of graham cracker squares on the bottom. You may need to break them up to cover the dish completely.

Step 3: Add Pudding Layers
Spread half of the pudding mixture over the graham crackers. Then, add another layer of graham crackers on top of the pudding. Spread the remaining pudding mixture over the crackers.

Step 4: Chill
Cover the dish with plastic wrap and refrigerate for 30 minutes to 1 hour, allowing the pudding to set.

Step 5: Prepare Chocolate Frosting
Microwave the tub of chocolate frosting for about 15 seconds to soften it (remove the lid and foil). Stir the frosting until it becomes easily spreadable.

Step 6: Add Frosting
Remove the plastic wrap and spread the chocolate frosting evenly over the top of the pudding layer.

Step 7: Final Chill
Cover the dish again with plastic wrap and refrigerate overnight to allow the graham crackers to soften and the flavors to meld together.

Step 8: Serve
Once chilled, slice into squares and serve. Enjoy your creamy, no-bake chocolate eclair cake!

Pro Tips for the Perfect No-Bake Chocolate Eclair Cake

  • Use Fresh Cool Whip: Make sure your Cool Whip is thawed properly for the smoothest texture in the pudding mixture.
  • Refrigeration is Key: Allowing the cake to chill overnight ensures the graham crackers soften to the perfect texture.
  • Customize the Frosting: If you prefer a thicker frosting, you can double the amount or add extra chocolate chips for more richness.
