Do you know the new onion (or green onion)? Originally from Central Asia, this dish was exported to Europe at the end of the Middle Ages and today has its place on our plates. Find out everything you need to know about this delicious vegetable.

Also called new onion, cive, chives, or better, the green onion is, as its different names suggest, a condiment very close to chives! Just like garlic or onion, this vegetable is part of the Alliaceae family. It is composed of a small bulb and long edible green stems.

How to choose the right green onion?

Green onions are available on the stalls between the months of June and October. Choose those with firm bulbs and green and undamaged items. You can keep them for about a week in the vegetable tray of the fridge or chop them before placing them in the freezer.

Do you have a green thumb? Even if the answer is no, know that it is possible to grow your own green onion very easily by reusing a bulb. Place it (root side down) in a glass with a bottom of the water and just let it blossom. You will only have to observe the stems grow from day to day and draw them according to your needs.

How to prepare and cook green onion?

Grab a cutting board and start by removing the damaged items and the onion bulb and finely cut the remaining stems with a sharp knife. Cut the bulb in half lengthwise and incise it with a thin knife, leaving the base intact (to facilitate cutting afterward). Finally cut the bulb in the direction of the width and chisel it.

The ingredients of the recipe for 4 people:

  • 8 wheat tortillas
  • 80 g heavy cream
  • 250 g grated cheese
  • 5 new onions (green onions)
  • 1 bunch of chopped coriander
  • 2 red peppers
  • 1 cuil. to paprika coffee
  • 2 lawyers
  • 4 tomatoes
  • 2 limes
  • 6 cuil. olive oil soup
  • Salt and pepper

The preparation steps:

  1. In a bowl, mix the grated cheese with the peppers (cut and seeded), 3/4 of the onions and the chopped coriander. Add paprika, salt and sprinkle with paprika, salt and pepper.
  2. Cover the 4 tortillas with cream then add the cheese and cover with another tortilla.
  3. Cook the quesadillas 1 to 2 minutes per side in a non-stick pan until the cheese begins to melt.
  4. Slice the quesadillas into four parts and then add the avocados and tomatoes cut into small dice. Prepare a dressing with olive oil, lemon, salt, pepper and some leftover onions that you will arrange on the whole. It’s ready!
