Supreme Turkey is a very fine and gourmet way to cook a turkey.
Accompanied by its veal stuffing and dried fruits, this recipe is a delight and a condensed flavor on the plate.
Ingredients for 4 people
> 4 turkey supremes
> 40 g of butter
> Salt, pepper from the mill
For the stuffing:
> 3 slices of crumb bread
> 15 cl of cream
> 4 shallots
> 5 dates
> 6 dried apricots
> 4 dried figs
> 80 g of poultry livers
> 150 g of sausage meat
> 150 g chopped calf shoulder
> 1 pinch of four-spices
> 3 eggs
> 80 g of raisins
> 2 cuil. flour soup
> the zest of 1/2 orange
> Salt, pepper from the mill
Turkey Supremes Recipe
Prepare the stuffing:
– Remove the crust of the bread slices and keep the crumb. In a bowl, pour the cream and arrange the bread crumb in pieces. Let stand for 30 minutes.
– Peel and chop the shallots.
– Cut dates, apricots, figs, and poultry livers into small pieces.
– In a bowl, pour the sausage meat, poultry livers, veal shoulder, add the drained bread, spices, eggs, dried fruits, orange peel, shallots, flour, and season at your convenience. Mix well and adjust the seasoning if necessary.
– Flatten the turkey supremes on a worktop, spread a little stuffing in their center, and roll (like a paupiette). Hold with a wooden spike.
Preheat oven to 180 °C (th. 6).
– In a pan, melt the butter, sauté the supremes until a slight coloration appears. Transfer them to a dish in the oven, pour 10 cl of water, cover, bake and cook for 20 to 25 minutes.
– Remove from the oven, then cut the supremes into three or four pieces.
Prepare the turkey supremes on a plate, drizzle with cooking juice.
