Strawberry Vanilla Bean Ice Cream

This homemade Strawberry Vanilla Bean Ice Cream is a delightful treat that combines the rich, creamy flavor of vanilla bean ice cream with sweet, tangy strawberry swirls. It’s the perfect summer dessert, or a delightful treat any time of year.
Ingredients:
For the Strawberry Swirl:
- 1 cup fresh strawberries, chopped
- 2 tablespoons granulated sugar
For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean, split and seeds scraped (or 2 teaspoons pure vanilla extract)
- 4 large egg yolks
Instructions:
Prepare the Strawberry Swirl:
- In a small saucepan, combine the strawberries and sugar.
- Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens.
- Mash the mixture with a fork and let it cool completely.
Make the Ice Cream Base:
- In a medium saucepan, combine the heavy cream, milk, sugar, and vanilla bean seeds (or extract).
- Heat the mixture over medium heat until it’s hot but not boiling.
- In a separate bowl, whisk the egg yolks until pale and smooth.
- Temper the egg yolks by slowly pouring about 1/2 cup of the hot cream mixture into the egg yolks, whisking constantly.
- Pour the tempered egg yolk mixture back into the saucepan with the remaining cream.
- Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat, discard the vanilla bean pod, and let it cool slightly.
- Refrigerate the mixture for at least 4 hours, or until completely chilled.
Churn and Freeze:
- Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions.
- When the ice cream is almost done churning, gently fold in the cooled strawberry swirl.
- Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.
Serve: Scoop the ice cream into bowls or cones and enjoy!
