Strawberry Vanilla Bean Ice Cream

A Creamy, Dreamy Dessert

This homemade Strawberry Vanilla Bean Ice Cream is a delightful treat that combines the rich, creamy flavor of vanilla bean ice cream with sweet, tangy strawberry swirls. It’s the perfect summer dessert, or a delightful treat any time of year.

Ingredients:

For the Strawberry Swirl:

  • 1 cup fresh strawberries, chopped
  • 2 tablespoons granulated sugar

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean, split and seeds scraped (or 2 teaspoons pure vanilla extract)
  • 4 large egg yolks

Instructions:

Prepare the Strawberry Swirl:

  1. In a small saucepan, combine the strawberries and sugar.
  2. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens.
  3. Mash the mixture with a fork and let it cool completely.

Make the Ice Cream Base:

  1. In a medium saucepan, combine the heavy cream, milk, sugar, and vanilla bean seeds (or extract).
  2. Heat the mixture over medium heat until it’s hot but not boiling.
  3. In a separate bowl, whisk the egg yolks until pale and smooth.
  4. Temper the egg yolks by slowly pouring about 1/2 cup of the hot cream mixture into the egg yolks, whisking constantly.
  5. Pour the tempered egg yolk mixture back into the saucepan with the remaining cream.
  6. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  7. Remove from heat, discard the vanilla bean pod, and let it cool slightly.
  8. Refrigerate the mixture for at least 4 hours, or until completely chilled.

Churn and Freeze:

  1. Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions.
  2. When the ice cream is almost done churning, gently fold in the cooled strawberry swirl.
  3. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.

Serve: Scoop the ice cream into bowls or cones and enjoy!

Tips:

  • For a more intense vanilla flavor, increase the amount of vanilla extract or use vanilla bean paste.
  • To make the ice cream even smoother, strain the custard through a fine-mesh sieve before churning.
  • For a richer flavor, use half-and-half instead of whole milk.
  • For a more intense strawberry flavor, use frozen strawberries.

Enjoy this delicious homemade ice cream!
