Ingredients (for two servings)
- large portobello mushrooms
- 1 onion
- 1/2 glass of wine
- 100g. butter
- 1 oil jet
- 1 cup carnaroli rice

Preparation
- The basis of all good risotto is undoubtedly the broth, says Paulina. So the first thing you should do is have it ready. You can make it homemade or box. It is very important to keep the broth close and over minimum heat. And it is preferable to over, because if it is missing.
- Next, aim to cut the vegetables: chop the onion very small, cut the mushrooms into slices and chop the green onion.
- Then, add a pot, place the butter and oil, and cook the onion over low heat until it is transparent, add a little salt so that it spreads liquid and is well cooked.
- Then, add the mushrooms, stir and cover. Leave it just a few minutes to brown without overcooking. Raise the heat very high and place a glass of wine. Leave until the alcohol evaporates (i.e. when there is no longer the smell of alcohol).
- Now if you add the rice and move well until it is bright and well soaked in butter, oil and wine, without roasting.
- Then repeat the following 3 steps until the rice is al dente:
- Add broth. More or less a medium ladle.
- Stir a little.
- Wait for it to absorb. Risotto rice always has to be wet, with liquid but not sunk in broth, if dry at all.
- When the rice is al dente, take it out, add some butter and beat vigorously to integrate everything. That’s going to be that your risotto is much creamier.
