Indulge in this delightful raspberry tiramisu that blends fresh raspberries, creamy mascarpone, and coffee-dipped ladyfingers into a refreshing dessert.

Ingredients:

For the Raspberry Puree:

  • 2 cups fresh raspberries
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

For the Mascarpone Cream:

  • 1 cup heavy cream
  • 8 oz mascarpone cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For Assembly:

  • 1 package ladyfinger cookies
  • ½ cup brewed coffee, cooled
  • Fresh raspberries for garnish
  • Cocoa powder for dusting

Directions:

Prepare the Raspberry Puree:

  1. Blend raspberries, sugar, and lemon juice until smooth. Strain to remove seeds. Set aside.

Make the Mascarpone Cream:

  1. Whip the heavy cream until soft peaks form.
  2. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
  3. Fold whipped cream into the mascarpone mixture.

Assemble the Tiramisu:

  1. Dip ladyfingers briefly into brewed coffee and layer in a dish or serving glasses.
  2. Spread half the mascarpone cream over the cookies. Drizzle with half the raspberry puree.
  3. Repeat layers with remaining ingredients.
  4. Cover and refrigerate for at least 4 hours or overnight.

Serve:

  • Garnish with fresh raspberries and dust with cocoa powder before serving.
