Ingredients:

For the Pistachio Sponge Cake:

  • 4 large eggs, separated
  • ¾ cup granulated sugar

For the Mascarpone Cream:

  • 1½ cups mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

For the Assembly:

  • ½ cup brewed espresso, cooled
  • ¼ cup coffee liqueur
  • ½ cup chopped pistachios (for garnish)
  • Cocoa powder (for dusting)

Directions:

Prepare the Sponge Cake:

  3. Beat egg yolks with half the sugar until fluffy. Separately, beat egg whites to soft peaks, adding the remaining sugar gradually, until stiff peaks form.
  4. Fold the yolk mixture into the whites. Gently incorporate dry ingredients.
  5. Spread batter in the prepared dish and bake for 20–25 minutes. Let it cool.

Make the Mascarpone Cream:

  1. Whisk mascarpone, heavy cream, powdered sugar, and vanilla until smooth and thick.

Assemble the Tiramisu:

  1. Combine espresso and coffee liqueur. Slice the sponge cake into layers.
  2. Brush cake layers with the espresso mix. Spread mascarpone cream between layers.
  3. Top with mascarpone cream, dust with cocoa powder, and sprinkle chopped pistachios.
  4. Refrigerate for 4 hours or overnight to enhance the flavors.
