Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened  
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, drained
  • 1/2 cup powdered sugar
  • 2 tablespoons pineapple juice

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream Wet Ingredients: In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.  
  4. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with sour cream. Begin and end with the flour mixture. Mix until just combined.
  5. Fold in Pineapple: Gently fold in the crushed pineapple.
  6. Bake: Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Make the Glaze: Whisk together powdered sugar and pineapple juice to make a glaze.
  9. Glaze the Cake: Drizzle the glaze over the cooled cake.

Tips:

  • For a more intense pineapple flavor, use fresh pineapple and drain it well.
  • To make the cake extra moist, add a teaspoon of pineapple extract to the batter.
  • For a sweeter glaze, add more powdered sugar or a touch of honey.
