Perfectly Spiced Snickerdoodle Cheesecake Recipe

Ingredients:

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/4 tsp ground nutmeg
  • 3 large eggs

Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions:

Prepare the Crust:

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes. Let cool.

Make the Cheesecake Filling:

  1. In a large bowl, beat the cream cheese and sugar until smooth. Mix in sour cream, vanilla, and nutmeg.
  2. Add eggs one at a time, mixing just until combined after each addition. Avoid overmixing.

Assemble:

  1. Pour the cheesecake filling over the cooled crust.

Add Cinnamon Sugar Topping:

  1. Combine sugar and cinnamon in a small bowl, then sprinkle the mixture evenly over the cheesecake filling.

Bake:

  1. Place the cheesecake in the oven and bake for 50–60 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool inside for 1 hour.

Chill:

  1. Refrigerate for at least 4 hours or overnight for best results.

Serve:

  1. Carefully remove the cheesecake from the springform pan. Slice and serve with whipped cream or a sprinkle of extra cinnamon sugar for a festive touch.
