These rich and creamy peanut butter chocolate chip truffles are the perfect sweet treat for any occasion. They’re easy to make and even easier to eat!
Ingredients:
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/2 cup graham cracker crumbs
- 1/2 cup mini chocolate chips
- 1 cup peanut butter chips
- 2 teaspoons coconut oil
Instructions:
- Combine Ingredients: In a large bowl, combine peanut butter, softened butter, powdered sugar, and graham cracker crumbs. Mix until well combined.
- Mix in Chocolate Chips: Fold in the mini chocolate chips until evenly distributed.
- Shape Truffles: Using a small cookie scoop or your hands, scoop out small portions of dough and roll into balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.
- Melt the Coating: Melt peanut butter chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Coat the Truffles: Dip each chilled truffle into the melted peanut butter coating, ensuring it’s fully covered. Place back on the parchment-lined baking sheet.
- Add Topping: Sprinkle mini chocolate chips on top of each truffle.
- Chill and Serve: Refrigerate for 15-20 minutes, or until the coating has set.
Tips:
- For a richer flavor, use high-quality peanut butter and chocolate chips.
- To make the truffles easier to handle, chill the dough for a few minutes before shaping.
- If the melted peanut butter coating is too thick, add a bit more coconut oil to thin it out.
- Store the truffles in an airtight container in the refrigerator for up to a week.
Enjoy these decadent treats!
