Oreo Brookie Ice Cream Cake – The Ultimate Dessert Mashup

This Oreo Brookie Ice Cream Cake combines the gooey richness of brownies, the creamy goodness of no-churn ice cream, and the crunch of cookies and Oreos into one spectacular dessert.

Ingredients

Brownie Base:

  • Any chocolate brownie recipe, baked and halved.

No-Churn Ice Cream:

  • 12 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 tbsp milk
  • 1 tbsp vanilla extract
  • 1 1/2 cups heavy whipping cream (cold)
  • 3/4 cup powdered sugar
  • 3/4 cup chocolate chip cookie crumbs
  • 6 chocolate chip cookies (chopped)
  • 1/4 cup mini chocolate chips
  • 3/4 cup Oreo crumbs
  • 6 Oreos (chopped)

Chocolate Ganache:

  • 9 oz semi-sweet chocolate chips (divided)
  • 3/4 cup heavy whipping cream (divided)

For Decoration:

  • Whipped cream
  • Chocolate ganache
  • Oreo cookies

Instructions

  1. Prepare the Brownie Base:
    Bake your favorite brownie recipe and cut it into two layers.
  2. Make the Ice Cream Mixture:
    • Mix cream cheese, granulated sugar, and brown sugar until smooth.
    • Add milk and vanilla; mix well.
    • Whip heavy cream and powdered sugar to stiff peaks. Gently fold it into the cream cheese mixture in thirds.
    • Fold in cookie crumbs, chopped cookies, mini chocolate chips, Oreo crumbs, and chopped Oreos.
  3. Prepare the Ganache:
    Heat 1/4 cup heavy cream until boiling. Pour over 3 oz of chocolate chips, let sit for 3 minutes, and whisk until smooth.
  4. Assemble the Cake:
    • Line an 8-inch springform pan with parchment paper.
    • Place one brownie layer at the bottom, spread half the ice cream mixture, then top with the second brownie layer.
    • Spread the remaining ice cream on top and smooth it out. Freeze for 6-8 hours or overnight.
  5. Decorate the Cake:
    Drizzle ganache over the edges and top. Add whipped cream, chopped Oreos, brownies, and cookies for garnish.
