Lemon Strawberry Swirl Cheesecake 🍋🍓

A refreshing and delicious dessert!

This layered cheesecake combines the tangy flavor of lemon with the sweetness of strawberries. It’s the perfect summer dessert.

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup melted butter
  • 2 tablespoons sugar

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • Zest and juice of 1 lemon
  • 1 teaspoon vanilla extract

For the Strawberry Swirl:

  • 1 cup fresh strawberries, hulled and chopped
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Crust:

    • Preheat oven to 325°F (160°C).
    • Combine graham cracker crumbs, melted butter, and sugar.
    • Press mixture into the bottom of a 9-inch springform pan.
    • Bake for 8-10 minutes. Let cool.
  2. Make the Strawberry Swirl:

    • Combine strawberries, sugar, and lemon juice in a small saucepan.
    • Cook over medium heat until the strawberries break down.
    • Blend until smooth.
  3. Prepare the Cheesecake Filling:

    • Beat cream cheese and sugar until smooth.
    • Add eggs one at a time, mixing well after each addition.
    • Stir in flour, lemon zest, lemon juice, and vanilla extract.
  4. Assemble the Cheesecake:

    • Pour half of the cheesecake batter into the prepared crust.
    • Top with spoonfuls of strawberry sauce, swirling it into the batter with a knife.
    • Pour the remaining cheesecake batter on top.
  5. Bake and Chill:

    • Bake for 55-60 minutes, or until the center is almost set.
    • Let cool in the oven for 1 hour with the door slightly open.
    • Refrigerate for at least 4 hours or overnight.
  6. Serve:

    • Garnish with fresh strawberries and lemon zest.

Tips:

  • For a richer flavor, use full-fat cream cheese.
  • To prevent the cheesecake from cracking, don’t overbake it.
  • For a more intense strawberry flavor, use fresh, ripe strawberries.
  • To make the cheesecake even more decadent, add a dollop of whipped cream on top.
