Ingredients
for the cake
- 125 g butter, softened
- pinch of salt
- ¾ cup CSR golden caster sugar or CSR raw sugar
- 3 eggs
- 200 g sour cream
- 1 teaspoon vanilla extract
- 225 g self-raising flour, sifted
for the chocolate ganache
- 200 g dark chocolate, chopped
- 200 ml pure cream
- 1 cup rhubarb-strawberry jam to serve
- ½ cup desiccated coconut, to serve
Instructions
- Preheat the oven to 180 degrees Celsius (160C fan forced). Using baking paper, grease and line a circular cake pan.
- In a large mixing basin, combine the butter, salt, and sugar. For a few minutes, beat with electric beaters until pale and creamy. One at a time, add the eggs, beating well after each addition until the mixture is light and fluffy. Combine the sour cream and vanilla extract in a mixing bowl. Mix for a few seconds till everything is well blended. Gently fold in the flour with a wooden spoon until entirely combined.
- Scoop the batter into the prepared pan and bake for 30 minutes, or until a skewer inserted in the center comes out clean.
- Remove from the oven and set aside to cool fully.
- Place the ingredients in a heavy-bottomed pot over low heat to create the icing. Cook for a few minutes, stirring regularly, until the chocolate has melted and the ganache is glossy.
- Cut the cake in half to assemble it. Take off the top. Cover the bottom half of the pie with one cup of jam. Place the top half of the cake on top. Drizzle chocolate ganache over the top and top with desiccated coconut.
Notes
Don’t succumb to the temptation of overbaking. After 30 minutes, the cake will be pale golden on the outside yet beautiful and moist on the interior. It will dry out if you bake it longer.
