Mango is one of the most popular tropical fruits. However, it originally comes from northwestern India and northern Burma and has been known to have been cultivated for approximately five thousand years. Its cultivation spread mainly to the tropical areas of the planet.
The nutritional properties of mango are many, highlighting its richness in vitamin B, folic acid, and vitamin C, although these amounts vary according to its degree of maturity. In fact, the more mature the mango is, the less vitamin C it contains and the more provitamin A it has.
Today we are going to explain how to make two delicious desserts that have this rich fruit as their main ingredient so that you can discover new formulas to eat it.
Burnt mango cream with curd
Ingredients for 4 people: 1 mango, 5 dl of fresh milk, 16 drops of milk rennet, 1 orange, 40 g of brown sugar.
Approximate cost (for 4 people): 4 € Calories per serving: 170 Time: 20-40 minutes + curdling Difficulty: easy.
STEP 1
Put a saucepan on the fire with the milk. Remove before it boils. Put in four glasses four drops of liquid rennet (in pharmacies). Distribute the hot milk in the glasses and leave it in the fridge to set.
STEP 2
Make orange juice. Peel and cut the handle. Put the mango and juice in a blender glass and crush very well.
STEP 3
Distribute the mango cream over the glasses of milk, once it has curdled. Add a teaspoon of brown sugar and burn with a blowtorch.
Grilled mango
Ingredients for 4 people: 2 mangoes, 150 g mascarpone cheese, 50 g pistachios, 60 g icing sugar, 1/2 teaspoon cardamom, saffron
Approximate cost (for 4 people): 5 € Calories per serving: 220 Time: 20-40 minutes + curdling Difficulty: medium.
STEP 1
Put a saucepan on the fire with 1 dl of liquid cream, 40 g of icing sugar, a few strands of saffron and half a teaspoon of cardamom powder. Heat over low heat for five minutes without boiling. Remove and let cool well.
STEP 2
Once cooled, lightly assemble the cream and mix with the mascarpone cheese with enveloping movements. Reserve in the fridge.
STEP 3
Peel and cut the mangoes in half discarding the seed. With a knife make some cuts on the surface forming a grid. Put a grill on the fire, sprinkle the mangoes with the remaining sugar and put on the grill until they begin to brown. Serve with cream cheese, sprinkled with chopped pistachios.
