Ingredients
For the Crust:
- 1 ½ cups (213g) graham cracker crumbs
- 6 tbsp (85g) melted unsalted butter
For the Cheesecake Filling:
- 32 oz (908g) cream cheese, softened
- 1 cup (198g) granulated sugar
- ¾ cup (151g) sour cream
- 2 tsp vanilla extract
- Pinch of salt
- 4 large eggs, room temperature
- 1 cup (43g) mini marshmallows
- ½ cup (90g) mini chocolate chips
For the Ganache and Topping:
- 1 cup (170g) chocolate chips
- ¾ cup (170g) heavy cream
- Jumbo marshmallows (for toasting)
Instructions
- Prepare the Crust:
Preheat oven to 325°F (163°C). Combine graham cracker crumbs and melted butter, pressing the mixture firmly into a 9-inch springform pan. Bake for 8-10 minutes. Cool completely. - Make the Cheesecake Filling:
Beat softened cream cheese until smooth. Gradually add sugar, sour cream, vanilla, and salt. Incorporate eggs one at a time on low speed. Gently fold in marshmallows and chocolate chips. Pour filling over crust and smooth. - Bake the Cheesecake:
Bake for 60-70 minutes until set but slightly jiggly. Cool at room temperature, then refrigerate for 4+ hours. - Prepare the Ganache:
Heat cream until simmering and pour over chocolate. Let sit 2-3 minutes, then whisk until glossy. Cool slightly, then pour over chilled cheesecake. - Add Toppings:
Arrange marshmallows on the ganache. Toast using a kitchen torch for a classic s’mores flavor.
