Decadent Boston Cream Cupcakes Recipe

Introduction: Indulge in the delightful flavors of our Boston Cream Cupcakes. These handheld versions of the classic Boston Cream Pie feature a moist yellow cake filled with rich pastry cream and topped with a smooth chocolate ganache. Ingredients:

For the Cupcakes:

  • 1 box yellow cake mix (plus ingredients listed on the box)
  • 1 tsp vanilla extract (optional for extra flavor)

For the Pastry Cream Filling:

  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 3 large egg yolks
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter

For the Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions:

Prepare the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Prepare the cake mix according to the package instructions, adding vanilla extract if desired.
  3. Fill each liner about 2/3 full with batter.
  4. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cupcakes cool completely on a wire rack.

Make the Pastry Cream:

  1. In a medium saucepan, heat the milk and sugar over medium heat until the sugar dissolves and the mixture is warm (do not boil).
  2. In a separate bowl, whisk the egg yolks and cornstarch until smooth.
  3. Gradually add the warm milk mixture to the egg mixture, whisking constantly. Return the mixture to the saucepan.
  4. Cook over medium heat, whisking constantly, until the mixture thickens (about 2-3 minutes).
  5. Remove from heat and stir in the vanilla extract and butter until smooth.
  6. Cover with plastic wrap directly on the surface to prevent a skin from forming and chill until cool.

Make the Ganache:

  1. Heat the heavy cream in a small saucepan or microwave until it just begins to simmer.
  2. Pour the hot cream over the chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy.

Assemble the Cupcakes:

  1. Use a knife or cupcake corer to remove a small section from the center of each cupcake.
  2. Fill the hole with chilled pastry cream.
  3. Spoon or drizzle the chocolate ganache over the top of each cupcake, letting it slightly drip down the sides.
