Ingredients:

- 2 cups Oreo cookie crumbs
- 1/2 cup unsalted butter, melted

- 1/2 cup heavy cream

Instructions:
- Prep the Oven and Pan: Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- Create the Crust: In a medium bowl, combine Oreo cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- Mix the Cheesecake Filling: In a large bowl, beat the cream cheese and sugar until smooth and creamy. Beat in the vanilla extract.
- Add Wet Ingredients: Gradually add the eggs one at a time, beating well after each addition. Then, stir in the sour cream and heavy cream until the mixture is smooth.
- Incorporate Chocolate Chips and Color: Fold in the mini chocolate chips and blue food coloring to achieve the desired Cookie Monster hue.
- Bake the Cheesecake: Pour the cheesecake batter over the prepared crust. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
