- Additional caramel sauce
Method
Prepare the Crust:
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of the prepared pan.
Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese until smooth.
- Add the granulated sugar and vanilla extract, and beat until well combined.
- Add the eggs one at a time, beating on low speed after each addition just until blended.
- Stir in the sour cream and heavy cream until smooth.
- Add the brewed coffee (optional) and mix well.
- Divide the batter into two equal parts. Add caramel sauce to one part and mix well. Add melted chocolate to the second part and mix well.
Assemble and Bake:
- Pour the caramel cheesecake batter over the crust.
- Add the chocolate cheesecake batter over the caramel layer. Use a knife to swirl the batters together to create a marbled effect.
- Bake for 55-60 minutes or until the center is almost set.
- Turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight.
Serve:
- Before serving, top with whipped cream, caramel sauce, and cookie crumbs. Drizzle with additional caramel sauce if desired.
Tips for the Best Cheesecake:
- Coffee Addition: If you love coffee flavors, don’t skip the brewed coffee! It adds depth and balances the sweetness of the caramel and chocolate.
- Marbling Effect: Use a knife to swirl the caramel and chocolate batters gently to create a beautiful marbled effect.
- Overnight Refrigeration: Allow your cheesecake to chill overnight for the best texture and flavor.
