Caramel Banana Pecan Cake Recipe 🍰

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 1 cup sour cream
  • 1 cup chopped pecans
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1 cup banana slices (for garnish)
  • Extra pecans (for garnish)
  • Frosting of your choice (cream cheese, buttercream, or chocolate ganache)

Directions:

  1. Preheat the oven to 350Β°F (175Β°C). Grease and flour 4 x 7-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Mix the mashed bananas and sour cream into the butter mixture until fully combined.
  5. Gradually fold in the dry flour mixture, mixing only until just incorporated. Gently stir in the chopped pecans.
  6. Divide the batter evenly among the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  8. Assemble the cake by placing one layer on a serving plate. Add your choice of frosting. Repeat with the second layer and place the third layer on top. Drizzle with extra caramel sauce.
  9. Garnish with banana slices and extra pecans. Serve with additional caramel sauce, if desired.
